I made my beautiful, wonderful, incredible Mother a birthday cake.
It was the first time I tried a fancy icing application and it was so much fun! I got the idea for this cake from i am baker. I love looking through her baked and iced creations, she’s pretty awesome. I even used her buttercream recipe and it was so delicious I couldn’t stop eating it…! I did change the cake a bit though. I added a couple tablespoons of pomegranate raspberry jam and a little pink food coloring to the buttercream for the inside layer. I’m a kind of obsessed with this pomegranate raspberry jam. It has been my dinner on more than one occasion. But, I digress… I wish I had a pic of the pretty pink effect inside but once we cut into it we didn’t stop eating to take pictures.
Hopefully my photography skills will improve along with my baking. The important thing is, my Mom loved it.
